Zucchini and Corn Skillet Sauté
Ingredients
- 3 tablespoon olive oil
- 1 1/2 cup corn kernels
- 3 cup zucchini, medium-cut cubes
- 1/2 cup onion, thin-cut
- 2 1/2 cup tomatoes, strip-cut
- 2 garlic cloves
- 1/2 teaspoon kosher salt
- 1 pinch cumin
- 1 pinch pepper
Instructions

Heat oil in a large skillet over medium heat. Add corn, stirring frequently about 6-7 minutes. Add onion and stir for 3 more minutes. Add zucchini and cook until tender, about 6 minutes. Stir occasionally. Stir tomatoes, garlic, pepper, cumin, and salt. Reduce heat to low-medium for additional 8 minutes.

Serve from pan. Although rich in flavor, you may also sprinkle some parmesan cheese on top.
