Who said granola has to be unhealthy? Not only is this granola easy to make, but it is rich in nutritional value. It is full of plant protein, fiber, and healthy fats. Add this mix to your morning parfait, sandwich, or acai bowl. I personally love to add dried cranberries to the mix. Feel free to add or remove ingredients for you liking.

Protein Rich Granola
Ingredients
- 1 cup almonds
- 1/2 cup unsalted peanuts
- 2/3 cup pumpkin seeds
- 2 cups whole wheat oats
- 3 tablespoons coconut oil
- 3 tablespoons agave syrup (or alternative)
- dry fruit
Instructions

Preheat oven to 350 F.

Grind peanuts and almonds. Transfer to a medium bowl.

Stir in pumpkin seeds and whole oats.

Melt the coconut oil slightly. Add coconut oil and agave to the dry ingredients and mix well.

Place evenly over baking sheet and bake for 15-20 minutes, or until golden. Add dry berries and let cool. Store in airtight container.
TIP: Stir granola after 10 minutes in the oven to ensure even roasting.
